 A Traditional Scottish Recipe for Plum Pudding

Plum Pudding Ingredients

The ingredients for plum pudding are highly variable. Chop and change as you please.

Six ounces of shredded suet
Four ounces of dry white flour
Four ounces of currants (optional - soaked in brandy)
Four ounces of raisins
Allspice and nutmeg, or cinnamon to taste
Three or Four Eggs
Approximately an eighth of a pint (70 ml) of milk
A glass of sweet wine

Plum Pudding Method

  Beat the eggs well.

  Place the suet, flour, currants, raisins and spices together in a bowl and mix well.

  Add the beaten eggs and milk to the mixture and continue to stir.

  This should now be cooked into a pudding as outlined in Puddings in General.
